1. Korea has more strict expiration date policies than US. Most korean foods expire after a year. Us it’s two.
2. Jang (ganjang gochujang doenjang) etc are all fermented. They’re meant to last forever.

I use all my pastes past the expiration date lmao. Gochujang, doenjang, ssamjsng, you name it. They’re all fermented so they’re usually safe to use past the exp date. I just keep them in the fridge after opening and leave the little silicone packet attached that says “do not eat” to keep it fresh.

We are all forgetting Koreans traditionally stored ~jang in a clay pots stored outside in the elements for years. They age like fine wine if done properly.
Kimchi stored similar way, but kimchi pots were usually buried in the ground with its lid peeking above.
