I rarely ever post to Reddit, I’m more of read and enjoy what I find type of user but I thought this video was too good not share here…this morning I thought I’d try out baking one of my loaves without my Dutch oven and take a “cool” timelapse of my rise…well as you can see it didn’t go as planned but hilarious nonetheless. Happy baking!
The recipe is from the tartine book…
900 g bread flour
100 g whole wheat
750 g water
200 g starter
20 g salt

Hey I’m a super beginner and I was almost in your situation. I saw a huge bubble at the bottom when I took the bread out of the fridge for scoring, I thought it was a mistake during the shaping so I decided to pop it with the scoring. A third of the bread went flat and my heart dropped to my stomach lol It came out dense and gummy, but we ate it all. How did yours turn out?
Did you have any steam in your oven? Looks like the crust set on top before the oven spring finished.
It’s definitely a moisture/steam issue. This is also the reason I don’t do “open bakes” using steels and pots of water, etc. because it was unreliable and if you don’t have enough moisture on the skin/crust of the loaf then it crusts early and either you get a blowout like this one or even worse you don’t get a blowout and instead get a thick tight chewy crumb.
This was a great video! That loaf was gonna be great if it weren’t for that blowout issue…. Great job on it, obviously you nailed everything you could nail until your oven messed it up! Still looks tasty too!

Nice footage. What kind of oven do you have to get that clear window view?
I wonder if anyone’s used fiber optic probe or something to capture a bake inside a dutch oven.
