Okay, had a friend come over for dinner and he said this steak was raw. Thoughts? 131 for 2:20 and seared in cast iron whee tallow.

    some people don’t understand what cooking meat actually means.

    sous vide pasteurizes the meat safely , and *is* fully cooked. in fact more cooked (and safe) than a med-rare usually is off a grill.

    but in the end, some people can’t get over the look and textures of a rare steak, regarding method.

    edit: also, that steak looks yum.

    Not saying it’s poorly cooked at all, but let’s be real and not act all surprised: if they are used to medium, or even medium rare, this is going to seem *much* more undercooked than they are used to. Even a 137 cook is going to look strange to someone who has only ever had broiled, seared, or grilled steaks before.

    If they’ve never had sousvide, they are probably looking at the lack of gray on the sides and freaking out, thinking that this couldn’t possibly have been cooked at all, and even if you explained it to them, their brain is reviewing the history of every steak they’ve ever had and going, “Nope, nuh-uh, that’s not done.”

    It’s not raw. It’s definitely on the rare side, more under than I prefer mine. But definitely not raw.

    I would recommend next time to ask how they like their steak prior to starting the process.

    You could just throw there steak in the oven for another 10 minutes if so.

    For him, and his taste it is raw, or atleast undercooked. Idk why people get so worked up that other people like food cooked differently.

    For me? Sure, this looks pretty amazing, but if a friend came over for dinner and it was undercooked for what they prefer, then I’m throwing it in the oven for a few minutes for them.

    The steak looks amazing. I have used my sous vide for 6 years now, and while I am not an expert, if I got those results, I would be dancing with joy in the street.

    Some people eat only with their eyes, and not their taste. Which means more oysters for me!!!

    You did a beautiful job with this. My parents prefer what they consider “medium” which is well past well-done.

    I’ve started tricking them-

    I’ll sous vide to real medium, pre-cut, and then sear the pre-cut slices on each side so they don’t see pink. I get a good medium steak, and they can’t stop talking about how juicy and tender their steak is.

    I think it’s decidedly on the rare end of medium rare, but it’s not completely rare, blue or raw.

    Do not trouble yourself to serve him steak tartare.

    I will say, the wall to wall consistency of a sous vide does make it look more “raw” to a person who has only cooked steaks that may look like that only in the very middle (like me previously). I was ashamedly a little taken aback at first but will have it no other way now.

    Perfect steak. Is it a filet? I wouldn’t want to cook a filet any higher than 131 because it’s so lean.

    I think so many people are used to overcooked restaurant steak that sous vide seems undercooked.

    I generally order medium rare in a restaurant and it’s always cooked more than this, however if I order rare, it’s horribly undercooked, I can’t win…

    How many other folks here end expensive steak dinners (especially prime rib) with “I can do better?”

    Like others have said looks medium and people are just used to things being more cooked than what they asked for. Next time you know to either not offer steak to that friend or crank it up to 140

    My parents are the same way. We were at my cousins’ wedding and they refused to eat their perfect medium steak because it was “raw”. Some people just dont know good steak.
