This was delicious! Cooked on a WSM w/ no water pan. Thermometer read just over 300 the entire duration. It took like an hour and 45 min. How’s it look?

    What temp did you put it on at? Did it hold at that tenp? I’m having a fuck of a time with direct heat and getting to 300 plus!

  5. Nice, try a full lit chimney next time and get it to 400F, juicy and skin comes out crispier! Same with wings or thighs.
