2 cups fine bulgur
1 cup boiling water
1 cup flour
1 egg
1 teaspoon salt

400g diced tomatoes or tomato sauce
½ cup vegetable oil
2-3 cloves of garlic

5-6 tablespoons yogurt

Hello everyone, welcome to my channel. I am Dilek. Today, I want to share a very delicious recipe with you. Bulgur meatballs or also known as fellah meatballs. The most important feature of this dish, which is made with different names in different cities of Anatolia, is that it is very delicious with few ingredients.

If you are ready, let’s start immediately. For our meatballs, you need 2 glasses of fine bulgur, 1 glass of flour, tomato paste, spices, eggs, tomatoes, garlic and We need olive oil. We want the bulgur to swell a little before we start kneading it.

For this, we put 2 cups of bulgur into the kneading bowl. We add 1 teaspoon of salt and 1 glass of hot water. Then we cover it and let it sit for 10-15 minutes. In the meantime, we will prepare our sauce. Today I used 400g of canned chopped tomatoes.

If you have ready-made tomato puree at home, you can use it or you can make it with fresh tomatoes. After adding salt, red pepper, olive oil and garlic to the tomatoes, cook until it reaches the consistency of sauce. When our sauce reaches the desired consistency,

We add black pepper and fresh basil if you have it at home before removing it from the stove. Our thick and delicious sauce, which is not too watery, is ready. Now we can start kneading our meatballs. We add a glass of flour to the swollen bulgur.

Then we add an egg and 1 tablespoon of tomato paste. As spices, we will add a teaspoon of basil and a teaspoon of cumin. Basil goes very well with bulgur meatballs. If you have it at home, I definitely recommend you to use it.

After mixing all the ingredients, we gradually add water and knead our meatballs thoroughly. We add water in a controlled manner. I used 1 glass of water in the measurements I gave. But depending on your ingredients, you may need less or more.

We knead our meatballs thoroughly to prevent them from falling apart or cracking. We will obtain a meatball mixture with a paste consistency. After our mixture reaches the consistency we want, we can start shaping our meatballs. We take a bowl of water with us. We will need to wet our hands frequently.

We cut off a piece of our expenses. After kneading it a little, we cut it into small pieces the size of marbles. As you can see in the video, after rolling the small piece with your palm, we press it from the top and bottom with two fingers and

Turn it from the edges with two fingers to obtain a button shape. It may seem complicated and difficult, but it is definitely not. It’s even fun. But if you say you don’t want to deal with it like that, you can also shape the meatballs by pressing them with your finger after rolling them.

We prepare our meatballs in this way until all the mixture is gone. It’s time to boil our meatballs. We add a teaspoon of salt and a few drops of lemon into the boiling water. Then, we drop our meatballs into the water so that they do not overlap too much.

After boiling for 5 minutes, when the meatballs slowly float to the surface of the water, it means they are cooked. We transfer our meatballs to the plate with the help of a strainer. Then we add our tomato sauce to the boiled meatballs. After mixing the meatballs with the sauce thoroughly,

We add parsley on top. You can serve it this way if you want, but I prefer to serve it with yoghurt sauce. We add salt and half a bunch of chopped dill to 4-5 spoons of strained yoghurt or well-drained yoghurt.
