Granny’s Chicken Salad – Yesteryear Country Market Chicken Salad
Granny’s Chicken Salad recipe is one that my granny used to make nearly every Sunday for lunch after church. I always ate a bowl full of it with a handful of crackers. This is one of my most cherished memories of my childhood.
I made a few tons of this at Yesteryear Country Market. It always sold out before I could make more. Everybody loved it.

Ingredients:
1 cup of cooked, diced chicken
1/4 cup of real mayonnaise
1/4 cup of pickle relish
2 to 3 teaspoons of lemon juice
1 teaspoon of sugar
2 to 3 teaspoons of onion powder
Salt and pepper to taste

These days and times that you can feed people for that much money so this recipe it kind of came from having to use leftovers I suppose I know certainly when I was growing up there weren’t any leftovers that were thrown away and when my kids were little I kind of had to use
Everything because I had four kids you didn’t let anything go to waste but this is less than a chicken breast and this will feed three to four people depending on how far you stretch it but the other things you’re going to need is you’re going to need about a quarter of a cup
Of pickle relish the pickle relish you choose in this is really going to affect the taste of it because the way that pickle relish is spiced is going to change the whole flavor of your chicken salad I personally like wickles full disclosure – the authenticity of this recipe being
My granny’s she used her own pickles nobody or in her carries my granny’s pickles none of these grocery stores they just don’t have them anyway I like the Wiggles if you have homemade pickles certainly they’re good in it and the pickles that she used in this were her bread and
Butter pickles now the other thing that I put in mine that is a little bit different than my granny’s is I use depending on what kind of chicken I’m using two to three teaspoons of lemon juice now granny would have just used a little bit of extra pickle juice in hers
To season it and that’s because she didn’t have access to grocery stores I mean they there really was no such thing where we lived you had to drive an hour and a half or two hours to even get to a supermarket like what we would consider a supermarket today and lemon trees are
Not in abundance in the Appalachian Mountains so if you’re using your homemade chicken you’re probably going to need at least three teaspoons of lemon juice to keep it from being dry if you’re using this canned you want to drain it and it’s still going to have quite a bit more moisture than your
Homemade chicken that you have left over so you can cut it down to two teaspoons probably you’re going to need a quarter of a cup of mayonnaise and you can use a little more if you like a little more if you’re trying to do something healthier you can also substitute the Greek yogurt
In this recipe you’re going to need two to three teaspoons of onion powder I like a little more flavor so I usually do the three teaspoons and I also put in about a teaspoon of sugar now this is optional and believe it or not grating
Used it in hers it just really adds to the flavor you’re not putting the sugar in it to sweeten it you’re using sugar more as a spice and it really does add a lot of flavor and you’re also gonna need salt and pepper no matter which kind of chicken you use
You’re gonna use some pepper unless you just really don’t like pepper but I’ll probably use maybe an eighth of a teaspoon if I had to measure it in this I’ll just shake a little in but it would be just a little bit of pepper in this much salt if I’m using this canned
Stuff I do not put any salt in this because the canned chicken has salt in it already and if you add salt the recipe it makes it too salty this chicken I made does not have that much salt in it so I’m gonna have to use a
Little bit of salt in it but you know you can stir this up and taste it and salt and pepper to taste anyway let’s get on with the recipe your chickens gonna be in chunks whether it’s homemade or in a can and you want to kind of
Shred it up you don’t want these really huge chunks in your chicken salad your finished product and you can do that with a fork if you’re making a ton of it like Alex and I did in the big bowl for the baby shower you can even use your
Hands to do this that’s probably the fastest way to do it just mash it up a little bit if you’re making this chicken and it’s hot it busts up really really easy and that’s also gonna have a little little moisture in it and if you’re using your leftover chicken all right
That’s pretty good we don’t have any huge chunks and it’ll bust up a little bit more as we stir this stuff in but I’m just going to dump my onion powder in there and my sugar and my lemon juice put my mayonnaise in now we sell a lot
Of this chicken salad at the store you can get a chicken salad sandwich there on fresh and bread any day of the week and every so often David makes some croissants that are just absolutely wonderful their traditional French croissants and he folds the butter in and they’re so flaky and delicious and
Things that are butter baked go really well with this I like it with butter crackers it’s wonderful on the croissants that the butter just adds a lot of flavor to it this is one of those recipes that’s it’s good if you’re gonna get together with some friends and you
Want to just sit around and talk and enjoy your time together or not have to spend a whole lot of time preparing something you make big jug of sweet tea in the summertime and some chicken salad and get a really good loaf of bread and cut it up and make little sandwiches or
You can get some croissants if you want fancier and cut those and put it in croissants but it’s really good really simple everybody likes it it doesn’t cause a lot of food allergies you know the stuff with the nuts and the fruit in it a lot of people can’t eat that
Because of food allergies and a lot of people can’t eat tuna salad because of food allergies but pretty much everybody can eat the chicken which makes it good for large gatherings now that’s literally all there is to making it you just have to chop up your
Chicken or bust it up if you’re getting this and mix up the ingredients and you’ve got Grady’s chicken salad now we eat this at home a lot of times with pasta in it and we’ll make a meal out of it in summertime especially when it’s really hot and you’ve been outside working you
Don’t want to come in at a big heavy hot meal so for this much chicken salad you want about a cup of uncooked pasta which will give you about two cups of cooked pasta you just cook it according to the directions on the package and then rinse
It off dump it in there mix it up you might need a little more Mayo but probably not but I’m gonna show you what that looks like – if you’re gonna use it on sandwiches or crackers they wouldn’t add the pasta and like I said this will
Feed three to four people and if you wanted to have a luncheon with friends you can do the pasta and just do some crackers on the side Brett absolutely loves this and he has a fish allergy so we can’t ever do the tuna salad or any
Of the recipes that have tuna enema flip everybody does with pasta and stuff so we do this oops but when we have this like this with the pasta in it I usually serve it with some crackers in season I love cucumbers and tomatoes with this I
Mean it makes a really delicious meal if you’ve got some fresh cucumbers and tomatoes but I’ll leave the buttery crackers with this even when we have it with the pasta in it and just kind of serve it like that for lunch and like I said it’ll do three to four people
Really easy recipe if you’re having a big get-together you just double triple you know keep multiplying the recipe you can do it on the crackers you can do little sandwiches just whatever you want there’s an endless endless way to serve this and you can find something way to
Serve it to fit just about any occasion if you don’t want to make it yourself like I said you can stop by yesteryear and we’ll be happy to make you a sandwich and if you stop by on the right day you can even get one of David’s delicious handmade croissants but this

What I do if my chicken salad is a bit soupy from the lemon juice, pickle juice or the canned chicken liquid is to add some Panko bread crumbs..they soak up the moisture. I do it with tuna salad too…I got the idea reading the ingred list on some Aldi chicken salad…it listed bread crumbs and I thought "what the heck"…then one day mine was too runny and bingo…grabbed my Aldi panko bread crumbs that I keep on hand and dumped some in…didn't affect the taste and it sopped up the liquid.
I love chicken salad, tuna/mackerel salad and ham salad on saltine crackers. I also like them on bread, or with pasta, but I love them on crackers, especially when I happen to have homemade crackers. I love your videos and your sharing of the Bible, don’t change anything.
