Is there an appreciable difference in flavor, and a noticeable gap in spice from one to the other ?
Are any of them more or less spicy than you’d hoped?

Oh these are pretty good. I’ve tried the dark and spicy and the green blend. The flames are quite large IMO so they were a bit rough for me as a garnish, but I made some incredible beef jerky with them. Not super spicy but got some heat.

I found the flavor of “Dark and Smoky” to be a little overpowering on some foods so I mixed mine with the “I Can’t Feel My Face” flakes in a grinder and to me it was the perfect balance between smoky and heat.

I put 1tsp of ground I can’t feel my face on my morning eggs. Best worst decision I’ve made in a while
