Smoked Breakfast Casserole Recipe | BBQ Breakfast on the Traeger Smoker

Sausage Egg and Cheese Breakfast Casserole Recipe
– 2lbs ground pork sausage
– 1 cup Diced Onion
– 1 cup Diced Bell Pepper (red and green mixed)
– 1 cup Sliced Mushrooms
– 10 large Eggs
– 2 cups Shredded Cheese
– 1 cup Sour Cream
– 1 Tablespoon Hot Sauce
– 1 Tablespoon Butter
– 1 Tablespoon Olive Oil
– Salt and Black Pepper to taste
– 1 package Crescent Roll Sheet Pastry
Directions:
1. Brown sausage over medium heat and drain on paper towel lined platter.
2. Add butter and olive oil to pan and sauté vegetables until tender about 3-4minutes.
3. Combine sausage and vegetables and set aside.
4. In a large mixing bowl crack eggs and whisk. Add cheese, sour cream, hot sauce, and a pinch of salt and black pepper. Whisk to combine.
5. Spray 9X11 inch baking pan with cooking spray and spread crescent roll dough in the bottom.
6. Spread sausage and vegetables over the dough evenly and top with egg mixture. Rest the casserole for at least 1 hour in the refrigerator.
7. Prepare Traeger pellet grill or other smoker for cooking at 350⁰.
8. Place casserole on bbq pit and cook for 1 hour rotating pan after 30 minutes for even cooking.
9. When top is brown and edges pull slightly away from pan the casserole is done. Remove from pit and cut into desired serving sizes. Serve with sour cream, crumbled bacon, pico, etc..
Pitmaster’s need breakfast too and this recipe is sure to start the day off right. I combine sausage, eggs, cheese, and a few vegetables (have to keep the doctor happy) for a tasty casserole that cooks right on the pit.
You can put it all together the night before and cook the next morning for breakfast or brunch. I serve it with plenty of fresh toppings (your friends can dress it up just right) and it goes perfect with a good Bloody Mary.

Hey welcome back to how to barbecue right I’m Malcolm Reed today we’re gonna be talking brunch or breakfast recipes I’ve got a great one for this sausage egg and cheese casserole what’d he do it on my Traeger pellet grill y’all are gonna love this recipe check it out so
The first thing we’re going to do for this breakfast casserole is we’re gonna do a little prep we’re gonna get it put together I’m starting with a couple pounds of ground pork for my sausage part and I’m mixing some spicy breakfast sausage seasoning with it really gives
It a great flavor and you could go ahead and buy sausage at the supermarket it would work just fine we’re just gonna get this pork mixed up then we’re gonna get it over in a hot iron skillet and we’re gonna Brown it up it’s only gonna
Take a few minutes you just want to cook it to the porch done and then drain it out on some paper towels now we’re also adding some onions and bell peppers some mushrooms to this casserole so we’re gonna get those sliced and diced up and then we’re gonna get those in that same
Iron skillet good pad of butter to give us some fat in there to give it some flavor you know I got to season it with a little bit of that salt pepper and garlic my AP seasoning we’re just gonna get those vegetables sauteed up a little
Bit you just want them to turn soft we’re not trying to caramelize them so this is where we’re at here we’ve got our sausage and our vegetables all together and I’m just gonna give it a gentle toss we’re just gonna mix it together mix those peppers onions mushrooms with that sausage
Everything’s been drained good and it’s ready to go for the egg mixture I’m starting with 10 eggs and I’ve got just broke out of the shells here to bowl and we’re gonna slightly whisk these just to break them up start combining them that looks perfect of course I want to get a
Little seasoning in there got a little black pepper a little bit of salt then I’m going to add some hot sauce you want to kick it up some need about a tablespoon that looks good just eyeball it let make some good scrambled eggs right there but we’re making the
Breakfast casserole so what we’re gonna do is we’re gonna add some sour cream need about a cup then we got 2 cups of cheese you can use any kind of cheese I’ve just got to blend that some Jack Colby cheddar I like a little bit of all
Of it there’s any kind of cheese is great in this casserole whisk it all together so we got our components ready now we’re going to assemble this casserole the first thing we’re going to do is we’re taking a 13 by 9 inch pan we’re just gonna spray it with some
Cooking spray you don’t want it to stay and what we’re using for our bottom crust for this casserole is just a sheet of Crescent though you can find these at your grocery store kind of like those little biscuits you gotta peel them out of this can so this crescent roll
Dough is our bottom crust you just want to find the seam in it carefully unroll it just use your hands if it’s got some tears just pinch it back together this will be buttery and flaky when we get all the sausage and vegetables and eggs
And cheese on it so now we’re ready for our layers in the casserole first thing we’re gonna get down is that sausage and a vegetable layer and now we’re gonna pour on that egg and cheese and sour cream mixture and it’s gonna run down in the sausage that’s what you want you
Know this is gonna be a hearty breakfast casserole you got all that sausage vegetables eggs and cheese and how good is that so at this point we’ve got our breakfast casserole put together and it really just needs to hang out you can put it in the refrigerator for an hour
Or so and just let all these flavors come together let those eggs seep into that sausage layer we put on there and this is also a great recipe that you can do the night before because you can let it sit overnight and it’s even better pop it in the smoker the next morning
When you’re wrapping butts or ribs then you could have a great brunch we’re gonna let our casserole hang out for about an hour I’m gonna stick it in the fridge then we’re going to come out we’re going to fire up our Traeger Timberline today I’m cooking on the 850
Model and it’s gonna cook this breakfast casserole just perfect y’all stick around and see what it looks like now it’s time to fire up our smoker and you know you could use any kind of pit to cook this recipe you just want to hold temps around 350 today I’ve got my
Trigger here it’s the 8:50 Timberline super simple to operate and it holds temp really well just turn the power on and then set the temp to wherever you want and I’m gonna start at about 250 just to get some smoke rolling get that smell going I’ve got some good apple
Pellets in the hopper today and then right before we put the casserole on I’m gonna dial it up to 350 that’s the range I want to cook at right our tracker is running at 350 degrees it’s time to get this casserole on some heat I’ve got the
Other chefs out so you can see what it’s doing but we’re just centering this pan up nothing to it gonna get the lid closed and hey we’re wanting those eggs to cook they’re gonna set that bottom crust you’re gonna get golden cheese is gonna melt it’s gonna

Sides you can see it’s still a little liquidy you still got a little ways to go here what I’m gonna do I’m just gonna rotate it around spin it real easy on this rack so it’s cooking even get the time on both sides let’s get the lid
Closed all right we’ve been cooking for one hour on our breakfast casserole just check it out this is what you want it to look like it’s browned over the top you can see those peppers and onions and mushrooms in it but it’s kind of pulled away from the edges and it’s kind of
Darkening up that’s what you want to see that’s how you know it’s done it’s set there’s no wiggle so let’s get it out on the cutting board get it off this heat tracker did its job today that is beautiful I’m ready to get into some of this you know it’s gonna go good
With a Bloody Mary so I’ve just let the casserole sit here on the cutting board cool down for a few minutes because it’s screaming hot I’m gonna go ahead and cut out a portion so you can see how it cuts and I’m just using a spatula you know
You can cut it up whatever size you want I want a man-sized portion so I’m taking half looks right loosen up the edges it’s starting to let go take my spatula sure it’s looser get under it a little bit check that out beautiful it’s cooked
All the way you can see how the eggs mix down with the sausages all cooked together that crust on the outside browned up real nice you know that’s gonna make people happy gameday added a barbecue wherever you’re at so let me show you how I would serve it and you
Can do this any kind of way hey it’s good just like this I like to make it a little extra special make a little toppings bar with it you cover some sour cream on top a little Pico tomatoes onion cilantro jalapeno that’s great on it no you gotta have some bacon make it
Makes everything better crumbled all across the top hit it with a little bit of green @ chives and hey one last thing well mine really kicked up I’m gonna give it some hot sauce that looks right to me so before I try it let me tell y’all
Real quick what we did we started out with a brown breakfast sausage mix some seasoning they’re kind of made my own peppers The Onion’s mushrooms sauteed all that combined it took all of our eggs 10 eggs mixed it with the cheese and sour cream layered out that crescent roll dough in the pan
Sausage the egg mixture threw it on the timberline took about 1 hour at 350 until they got golden brown on top and the egg set it is time to try this breakfast casserole I’m gonna get a bite right out here looks like good one little sour cream will let Pico afraid

Made this a couple of times with slight modifications (we don’t like onion or mushrooms) and it is the best breakfast! Did a “low carb” version with just sausage, egg, cheese, and sour cream and it amazing!
