Dusted off the old bullet. Pitched the water pan. Grilling a Corned Beef point. Prolly roll it a couple hours then finish in a Dutch oven.

    Ok it’s a brisket. Aldi sells corned beef briskets pre seasoned. I’m curious though what the outcome will be smoked. Smoked pastrami? There’s a famous restaurant (Katz’s) in NYC that I believe does this. Normally you’d put this in a crock pot with a beer. Let us know how it turns out!

    Currently have a flat going now. I did a run of cracked pepper (freshly cracked with a knife) coriander and onion flakes. Gonna have some bang up sandwiches this week.
