blueberry oatmeal bars with lemon protein icing ✨(recipe and macros on next slides)

Sounds amazing! Do you have the step-by-step instructions so I can try it?
Also, do you think it would be okay with unflavored protein powder instead of vanilla? I only have unflavored and chocolate 😅

instructions:
mix all of your dry ingredients together (oatmeal, cinnamon, salt). whisk to incorporate.
mix together wet ingredients in a separate bowl (egg whites, milk, vanilla extract, greek yogurt) whisk to incorporate.
add the wet ingredients to the dry ingredients along with your blueberries.
bake at 350 for anywhere between 20-30 minutes depending on how deep your dish is. mine took around 30 because it was a 9×9.
while that is in the oven mix a scoop of vanilla protein powder of your choosing with 50ml in 10ml batches. stir to avoid clumps. add in 1/8 teaspoon of lemon extract or lemon juice. you may have to sieve it for a smoother consistency.
once they’re out of the oven, drizzle the glaze while still warm so it soaks into all the crevices.
let cool for 15 minutes or 10 if you want it still warm.
enjoy!

Thank you for sharing this! I really want to try these now. One question…. Is your Isopure stuff considered whey isolate? I’ve noticed all my baking with whey isolate has been kinda…rubbery. I started using casein and it’s been a game changer. So I’m thinking of making these but with unflavored casein instead and adding in some vanilla extract for flavor.

edit: i cut mine into 8 because 6 seemed like big pieces, so it would be 132cal each serving for 6. but you could cut it into 6 if you’d like. my mistake.
