Excellent macro split – very dense and filling
Can add normal or cauliflower rice for extra volume/carbs (depending on goals ofc)
Recipe (makes approx 6 serves):
-To a large pot ad roughly diced pumpkin (without skin)
– Bring to a boil then reduce heat and simmer until very soft (don’t stir too much)
– strain the pumpkin and let cool slightly
– to a very large pot add stock, tomatoes, capsicum (I think they’re called peppers in USA) spices and yogurt (low or non fat will congeal so I use full fat instead of heavy cream)
– use a blender to combine all ingredients very well
– while continuing to blend slowly spoon in the pumpkin
– once all is well combined put on low heat
– thoroughly wash beans and add to the pot stirring frequently
– dice chicken breast and add while continuing to stir
– dice broccoli and add while continue to stir
– add salt and pepper to taste
– once chicken has cooked through and enough liquid has evaporated you’re done!
Tips:
– you can add water and let simmer for a while before adding chicken and broccoli so the beans take on the taste of the curry (just make sure the heat is low and you stir regularly)
– on such a low heat the chicken will probably take about half an hour to cook depending on how big the pieces are
– I used spice packets because individual herbs are so expensive but if your making a herb mix yourself just follow a butter chicken recipe
– if you don’t like the taste/texture of beans but want to add them they can be blended aswell
– I prefer Kent pumpkin instead of butternut because it’s sweeter but any pumpkin will do; also if your pumpkin is out of season and a bit bitter you can add a small amount of natural sweetener
– last thing is it’s a very adaptable recipe so if your vegetarian then I’d leave out the chicken and add a heap more beans/legumes (like lentils) and more veg (like broccoli and cauliflower)
