– 1/4 cup cottage cheese – 1/4 cup reduced-fat lactose free milk (blend with cottage cheese) – 1 lb frozen spinach 450 g (thaw out, squeeze out remaining water) – 1.3 cups reduced-fat lactose-free milk (originally 2/3 cup, had to add more upon blending) – 2 tsp minced garlic – fine sea salt and pepper – 1-2 teaspoon fresh lemon juice – 50g (about 1/2 cup) freshly grated parmesan
