  1. Ah, those late night cravings! I always have a handy jar of crunchy peanut butter, along with various rye crackers. I spread the crackers with the crunchy peanut butter, and maybe a squirt of agave nectar. Since I'm diabetic, if I actually want to bake cookies from scratch, I have to find an alternate sugar. Allulose works very well as my sweetening agent, but one day I am going to try Agave nectar.

  4. Yes I do have late night cravings. I usually crave nuts or chips, but I have to keep the chips out of the house. If I want something sweet, I have Greek yogurt with a little honey. I do indulge my cravings because, I can't sleep if I'm hungry. Re these cookies, I have almond butter on hand so may try that.
    OK so, I used almond butter and powdered stevia/erythritol sweetener. They turned out just fine.

    I noticed the almond butter recipe calls for 1 tsp of baking soda but this was not listed for the peanut butter recipe. Should I add this?

  9. Kevin I get late night cravings for something yummy all the time. One of my favorite snacks is roasted garlic cloves, served on a cracker! But I'm sure these cookies would also do the trick. Thank you for sharing this recipe!

  10. Just made them they are astronomically delicious and easy to make so I choose to use organic eggs & organic peanut butter but you forgot to tell us how many degrees to set the oven at?? either way thank you for the recipe. 😮

  11. Sometimes I want peanut butter, too. I usually just take a half teaspoon of creamy pb, and spread it on half a piece of sandwich bread, and cut the crusts..so there are 2 tea sandwich bites, with a small cup of decaffeinated black tea…plain…chilled for hot weather, nuked 1-2minutes on high for cold weather, and that usually suffices…..I try not to ignore big cravings because then I end up thinking about it all night long
