pot roast! it uses chuck steak, sweet potatoes, carrots, onions, garlic, and herbs! sweet potato adds a really nice flavor and now i have dinner for 3 days! used this recipe: https://savorthebest.com/herbed-pot-roast/ but had less meat, swapped sweet potatoes, lowered oil and flour, didn't make the gravy at the end, and deglazed with broth instead of wine.

Cook’s Illustrated/America’s Test Kitchen has a pot roast recipe where you blend and reduce the expended roasting/braising vegetable “mirepoix” + liquid, along with a little bit of wine and basalmic vinegar if wish, to make gravy. No roux required, so works slick if looking for a low(er) calorie gravy sub.
