Made lunch for tomorrow with a few ingredients I had available. Lentils made with half an onion, 1 carrot, 1 tomato, bay leaves, garlic powder, paprika, salt and pepper. Potatoes made in air fryer with a drizzle of olive oil and Kinder’s woodfire garlic seasoning. Made enough for two and have some lentils left over. Cheap, easy, and delicious. What’s not to love about a whole foods plant based diet?

    Do yourself a favor and skip the oil next time. I just made some oil-free fries in the oven and they were fantastic. 425 for 30 minutes with a dash of onion and garlic powder
