Hi, I’ve done a batch of kimchi and it has been staying in the fridge for about 2 months now.

Out of the 4 jar, one got two big spot of mold growing on it. It was really white mold and did not smell bad. I discarded the part where the mold was. Do you think it is still possible to eat the rest ?

    The thing with mold is, that the part you are seeing on the surface is just the fruiting body of a larger organism. Especially with soft foods like kimchi the mycelium has probably spread quite far into the jar. Now whilst most molds are not acutely toxic (meaning you won’t get sick immediately) there is still a good chance that it has produced toxins that are now in your food which is not very good. Also there are definitely molds out there that can be very dangerous and you just cannot be sure if this specific one is dangerous or not, so it’s best to just chuck the jar and start over.

    I would not eat that. If that white fuzzy mold grew and fruited, then the acidity and the “good” culture is not correct, so you don’t know what else might be growing in there.

    Toss it. Your kimchi looks wayyyy too dry, it should be totally submerged in its own liquid.

    If I saw mold on my kimchi, I would, with sorrow in my heart, discard.

    When I saw your photo, my initial reaction was: awww, cutie pies. So round. So bright white So fluffy. What an organized community to create such a home.

    No. Toss the whole jar. It’s contaminated.

    If your other jars are this dry, keep a close eye of them. They should be submerged in their own liquids.

    From personal experience I’ve only had this happen when I first started making kimchi and there wasn’t enough liquid to cover everything. I did the same where I just discarded the top layer and the remainder of the jar was fine (imo) to eat. I used it to make kimchi stew for myself and I wouldn’t recommend it if you’re cooking for other people.

    Err… 2 months is the fridge for Kimchi, which is a bit too long, especially if you have already touched it. For health and safety reasons, do throw it away and make a new batch. Try to consume your kimchi within 2 weeks. Kimchi should be full of probiotics and not fungus. My guess is that it got contaminated.
