Surprisingly good. I’m always suspicious of fat free cheese, but when you mix it with enough cheese that has fat, is does melt as well as normal cheese.

I used 1/2 cup pasta water, but if you like a thinner cheese sauce, I’d use more (or milk if you prefer)

And yes, the dog did get a noodle that I accidentally dropped on the ground while cooking.

    Love fiber gourmet!! I make a cheese sauce with blended cottage cheese that’s pretty excellent.
