Happy thanksgiving y’all um today we’re gonna do broccoli rice casserole and first thing i want to do is show y’all this little thing because um i did i was recording on where y’all are today and i had y’all sitting back here when i did sweet potato casserole

And a lot of you asked about this and that’s what this seeds is just a weather vein some of you thought it was attached to my refrigerator and i looked at my video and i was like yeah i guess if you didn’t know what it was i guess i

Could see that it seemed he’s usually on my kitchen island he won’t be here for thanksgiving because i can put food where he’s supposed to be so i’ll put him up on my cabinet or something but he’s just a rooster weather bank and y’all show y’all my world what i live in

You seek out the north south east west you turn well my youngest son john tyler if he comes in here and it’s wrong well he’s lining it up okay there’s north there’s south that’s what he does so that’s what that’s what i deal with just about on a daily basis but he’s silly

Anyway i’m gonna sit mr rooster a little further away from us so we can make our broccoli rice casserole and this is just the classic recipe that i learned probably in the 80s i guess um and when i was the one just bringing it to my grandmother’s when everybody was bringing a dish

And i could really concentrate on it i would actually boil a whole chicken and debone it and i would use that broth or stock to put in my um broccoli rice casserole and i would actually put the chicken in there and so it actually made it

A complete and total meal in itself um but now that i’m doing everything of course i don’t i don’t do that and y’all know we put chicken in that chicken and dressing so we don’t need to do that today but um first thing i did before i got on here

I sauteed in a half a stick of butter and i am doubling my recipe because at the end of this i’ll try to put my recipe card and this i just know that i’m doubling it my recipe card is just a single um recipe for it so i did

Four a half a stick of butter four tablespoons of butter i melted and i sauteed one cup of chopped onion and y’all know we reached right into this pre-chop that we’d already done earlier and one cup of chopped celery that we’d already done earlier that was in the freezer

So that’s real handy just throwing these together when you need to so like i say i did that back earlier last month and the month before if i was chopping onion while i went on chopped a bunch of onion if i was chopping celery i went on chopped a bunch of this

But if not i know you can buy i know you can buy chopped onion frozen but i’ve never seen chopped celery just alone frozen if i ever do you better believe i’m gonna be getting some and i’m gonna put two cans of cream and mushroom soup um these are the

Yeah just your single regular sized cans y’all don’t know why i think i can read this ten and a half ounces what they are cream of mushroom and i’m gonna do two cans because i’m doubling i’ve been out feeding my baby cow this morning mama

And i’m gonna tell some of y’all to help me with that mama i i’m not sure that i never saw her nursing this calf did she do that because he was born blind because now he’s not blind um i gave him vitamin a and i’ve been feeding him but she just

Watches us she’s actually just sitting up there eating hay and feed watching me feed her baby it’s not it’s not going over real well with amy but anyway i wonder did she give up on him or what did she do because she has milk

I can see she has milk and i’ve tried to lead him over there to her and she just walks away from us so i don’t know i don’t know my husband heard her the very first day he heard her going up and calling a baby because she had it hidden

Like they do and then after that you know once we saw him about a day later than that is when he looked poorly and i could tell he was blind and so we gave him that vitamin a shot and so i don’t know so a lot of

Y’all i know grew up on farms and so will the mama just let him go if they seem sickly or something or do we need to get rid of her because i’m gonna have to do this to the spring like four months so i’m like really all during the holidays

Which i don’t mind but if she’s gonna do this to me again i don’t know i don’t know i told john let’s give her a second chance but i don’t know all right y’all so we’ve got the one cup of celery and one cup of onion sauteed and a half a stick of

Butter and i sauteed them like maybe three to five minutes just where they got soft in here okay that was it and so now i put two cans of cream of mushroom soup and i told y’all it was classic yes i did and we’re gonna do two jars of this cheese whiz

And you don’t have to do that you can actually use let’s see what my recipe calls for an eight ounce package of velveeta or if you want to go classic this jar of cheez whiz which is a 15 ounce jar of cheese whiz so um whichever you want to do but i like

To stay classic some things um just remind you of the younger days you know when when your grandparents were alive and all the family was getting together like that just younger days and so i like to do the cheese whiz it even smells classic it smells classic y’all

So i’m put two two jars of this and next we are going to do some store-bought chicken broth like i say you can i used to get real complicated with it you know or not complicated but really homemade and boil that whole chicken and debona put that chicken in here

But um now that i do the chicken and dressing i do everything because at that time my grandmother made the dressing she didn’t put chicken in it so anyway but now we’re just doing a quick classic recipe i don’t know i better keep here just in case we need

All right guys now i’m gonna need my original recipe is one cup of chicken broth but so i gotta put two two cups and this is a two cup measuring cup just in case y’all think i’m just putting one cup i think somebody did one time said

You just put one cup and i thought oh well i didn’t say that was a two cup measuring cup it’s a two cup measuring cup i got a little bit left over i’ll put that in the refrigerator because it’ll go in anything and everything so i’ll put that in here and

Wow i haven’t put my broccoli in yet or my rice i’m going to go on and stir this up stir it up i had to stir it up i don’t know i was raised by my mama and you would have you would have guessed she was an english teacher because she just said

Stir it not stir it up so my mama always echoes in my head when i say something wrong like that all right y’all this will let it get creamy without me putting the broccoli in it just yet now see how simple and easy this is i know and that salt is plenty of

The salt the soup is plenty salty and that chicken broth is plenty salty so i don’t worry about adding salt okay something i ain’t gonna have y’all know i am let me grab it we are gonna put some smoked paprika up in this stuff yes we are yeah that’ll be so good won’t

It yeah let’s do it let’s do it i’m gonna just shake a little bit we’ll put about a half or three quarters of a teaspoon something like that not anything crazy that’d be pretty sprinkled on top too wouldn’t it something you can do if i make this at

Christmas time i’ll put a jar of pimentos drained in here and it does the little red specks and that makes it um festive like christmasy looking christmasy is a word isn’t it i know because i use it it’s gonna be a word right okay now oh this is so easy and so classic

Minute rice yes one minute rice do i cook it first no no no no do i have to cook pre-cooked rice i don’t know because this is what the recipe calls for and that’s what i said i’m getting it that’s the first time i ever bought this was when i made this i

Was like wow mint rice but um the recipe costs for one cup so i am putting two cups of mint rice in here raw uncooked mint rice one and two and i put a generous hook on that second one just because just because and then y’all normally if i’m making just one a

Single recipe i’ll put in a package of frozen and this is a my recipe costs for 10 10 ounce package but this is a 14 ounce package it doesn’t matter at all but this is some frozen broccoli and this is the stems and the florets and that’s what i do if

I’m just doing a single recipe so you’ll have some of the stems and some of the florets like that but since i’m doing a double recipe the second bag i got was just the florets because they’re real pretty aren’t they they are they’re the purdiest thing so i did that

It’s looking good i’m hoping y’all can see in this i’m recording myself two different ways right now i’m trying to please everybody some of my youtubers watch me on the tv or full screen or they turn their phone sideways and they want me to fill up the

Whole screen and then some of my people some of my friends they want to watch me just straight up down vertically on their phone and they want me to be closed up close and personal so i’m trying to please everybody amy is a people pleaser and i’ll tell you what i’ll run myself

Raggedy trying to please everybody but well oh well okay guys y’all see it’s quite soupy but like i say that rice is not cooked now if you put regular rice long cooking rice i don’t know how that’ll work okay i used to do it before and i would pre-cook my rice

And put that in there but this is just minute rice uncooked okay instant rice yeah and we are going to get another one of these temptation pieces that mary beth gave me and this is the 9×13 and you like i say you can if you make a half a recipe

It you can still put it in 9×13 but it’ll be not quite as thick which won’t hurt a thing and you can get some shallow 9×13 pants i have a pyrex one that’s just clear glass it looks good in that i’ve done that before too let’s see if this thing’s gonna fit in

This one y’all y’all it looks like it is yeah yeah and i’ll put y’all on the other side of the kitchen too because i i noticed too and several people said it when i did my sweet potato casserole my whole entire video was yellow yellow tint it was so weird and strange

And odd i had no idea so i said well maybe this background kitchen window will give us some daylight in there mixed in maybe won’t be quite so yellow look at that that is just perfect on purple yeah and there we go and that that broccoli is still frozen in here

But that’s good because i’m about to stick it right into the freezer and on the day of well the day before thanksgiving actually i got my soapy water back there waiting on me um the day before thanksgiving 24 hours before i’ll take it out of the freezer and i’ll put

It into the um refrigerator and i let it thaw and if you don’t have that kind of refrigerator room the day of this you’re going to bake it just take it out and stick it on your kitchen counter covered for a couple of hours and if you don’t have that kind of time

Or you forget don’t panic just take it out and put it in the oven but start in a cold oven okay because that’s gonna be real cold and frozen okay and so just stick it in your oven then turn your oven on so it has time to heat it

And nothing will break on you or anything like that so um but what i’m doing is covering it and i’m gonna bake it covered let me see how long 45 minutes covered on 350 degrees and then fahrenheit so i have some people i have a lot of people that watch from

Europe which i love and um so it’s fahrenheit 350 degrees and uh cover for 45 minutes and then after that i will take the top off and i’ll let it brown just 10 minutes or so just until it gets bubbly golden on top you know you know how it’s supposed to look

And um pretty till it gets as pretty as you want to eat it and because of that smoked paprika looking so festive doesn’t look so pretty yes we are going to do that too that just looks beautiful beautiful beautiful all right guys i am going to get up in

Here but i’m going to cover it with full and then i’m going to put my temptations top on it just like i normally do and then i’ll leave that fall on there when i bake it because i won’t put him in the oven today but i’ll leave the full on there to bake

It and it’ll be another one of our delicious dishes for thanksgiving and we’re about we’re working on it we’re knocking it down aren’t we and i wanted to tell you too um some of my videos because i may do my turkey a couple of days before so i could pre-make the gravy and

Then put it in a crock-pot up here on this island but i won’t make my ham until the day of thanksgiving okay so y’all aren’t gonna see that ham video it’s time to like run out and do a ham but ham is so good at christmas time

And so and this particular recipe is really good around christmas it’s a it’s a gla i put a glaze on it that’s got molasses and honey and bourbon and um so it’d be it’d make a real good christmas thing so if you don’t get to see that before thanksgiving and i know

You won’t because i’ll i won’t get it posted until after thanksgiving then um you can do it for christmas okay so i will see y’all later we’re gonna make some more thanksgiving recipes

  3. Is this her first calf? If so, she might do fine with #2. But with my parents always ranching,we have had to bottle feed several. Especially if there were ever twins the mom would always just take to one. But I do believe they know when there is something wrong with their calf. I didn’t even realize that they still made cheese wiz. My nieces love this casserole, their Mom always made it and she passed this year in April then her mom a month later, and then my dad a month ago. So those two littles have been through a lot this year other than just this Covid-19. I am so ready for 2020 to be done. Love you sweet spirit and your videos ❤️

  5. Make this every year. Precook rice and forgo chicken broth. (Will have to try that tho) But we've always added water chestnuts to give it a little crunch. Yum!! Love watching you Amy, you're a sweetie!!!

  7. Enjoyed the video so much! I haven't made it in a long time. Didn't know you could use Minute Rice. Always cooked my rice and added it in. Just a tip…..I use Chez Whiz also. They have a type that is spicy, Mexican…..don't remember what it is called. But it is so good in the casserole. But hadn't tried putting it in with chicken.

  9. All animals just leave their little ones that have problems. Nature. I have saw birds throw their little birds out of nest if too many. Also they say never to touch little animals after they are just born. They will disown their little ones they smell your scent on them. They have to have their scent on them

  10. @Amy I have been making that broccoli and rice for years, your right my family loves it and expects it on special occasions,but I put crushed ritz cracker crumbs and butter on top of mine before I bake it so pretty and golden brown. Love you cooking site keep on

    We had the same thing happen when I was growing up on a ranch, the momma cow completely shunned her new calf because he was blind. We had to bring him to the barn and feed him. He was the sweetest calf. I guess she could sense something was wrong with him.

  14. On some other apps I have seen goat owners tying the mother up and giving her favorite food and putting the baby on the teat and mama lets the baby nurse. I wonder could you put a cow on a short rope or just enough to let her feed and doing this same thing as the goat. Just curious whether it might work. I know this comment is after the fact but may help another time.

  16. I used a glass Pyrex 13 by 9 dish with a delicious looking casserole in it once. Nothing was frozen. I put it in the oven and the next thing we knew, we heard a funny noise in the oven. The whole dish blew into pieces all over the inside of the oven!!😢. What a mess to clean up. I’m not sure to this day if we got all the pieces of glass out of that oven. Did the best we could, and ordered pizza!
