Ingredients:
For the Shrimp:
1 pound large shrimp, peeled and deveined
1 tablespoon Cajun seasoning

Instructions:
Prepare the Shrimp:
In a bowl, toss the peeled and deveined shrimp with Cajun seasoning, ensuring they are well coated. Set aside to marinate for 10-15 minutes.
Cook the Grits:
In a medium-sized saucepan, bring 4 cups of water to a boil. Stir in the stone-ground grits and add salt to taste. Reduce the heat to low and cover the saucepan. Cook for about 20-25 minutes, stirring occasionally, until the grits are thick and tender. Once cooked, remove the saucepan from heat and stir in the butter and shredded cheddar cheese until melted and well combined. Set aside and keep warm.
Prepare the Sauce:
In a large skillet or saucepan, melt 2 tablespoons of butter over medium heat. Add the finely chopped onion, red bell pepper, and minced garlic. Sauté until the vegetables are soft and aromatic, approximately 5-7 minutes.
Cook the Shrimp:
Push the sautéed vegetables to one side of the skillet and add the marinated shrimp to the other side. Cook the shrimp for about 2-3 minutes per side until they turn pink and are cooked through. Stir the shrimp and vegetables together and remove them from the skillet, keeping them warm.
Make the Sauce:
In the same skillet, pour in the chicken or vegetable broth, scraping any browned bits from the bottom of the skillet. Allow the broth to simmer for a few minutes to reduce slightly.
