Hello friends, I’m Valentina! Today we’re making Mozzarella Sticks with a homemade dipping Marinara sauce I’m starting making the dipping sauce: I make it in the Italian way, so if you are not Italian you could find it slightly different from the one you usually make
In Italy we use fresh and high quality ingredients for this reason we use few ingredients and you can taste every ingredient when you eat so our sauces are not full of onion, garlic, or spices, because no one flavor should prevailing
I start sautè the extra virgin olive oil that comes from the mill of my relatives with about half shallot finely minced and 2 whole garlic cloves This is the tomato puree my mom makes every Summer using fresh San Marzano tomatoes
As you can see is pretty hard to open 😀 a knife could help me, this is a trick my grandma teacehd me when I was a child …et voilà! this is made only with tomato puree and basil leaves: no oil, salt or seasoning
You can use a store bought tomato puree or puree canned tomatoes the sauce should cook slowly over very low heat for long time: the time depends on how much water features your tomato puree
It also depends on how many sauce you are preparing: if you make more sauce, it needs more time to cook it’s ready when thickened. My sauce cooks about for 30 minutes. When it’s ready, you can remove garlic cloves. The seasoning is simple: salt and dried oregano
I also add a bit of red pepper chilli powder, but this is optional I am very lucky because both my red pepper powder than oregano are homemade, so they are incredibly rich in flavor…so much better than the store-bought!
The Marinara dipping sauce is ready. As you can see it has a rustic texture. If you prefer smooth creamy sauce, you can use a dipping blender. Now I’m preparing the ingredients for coating Mozzarella sticks We need all purpose flour, 2 eggs with salt, fine breadcrumbs and panko breadcrumbs
I make my own breadcrumbs finely grating my leftover breads, but you can use store-bought fine breadcrumbs This is not quite Panko breadcrumbs, it’s made with leftover Italian “pugliese” bread shredded in coarse flakes, so it’s similar to Panko
For Mozzarella sticks it’s very important to not use fresh mozzarella (I mean the one in its water) use the Mozzarella block (in Italy we call it “Mozzarella for pizza”), it is dry and it doesn’t release water while frying
I cutted in equal 7,5 cm – 3 inch sticks. You’ll get 15 sticks with 270 g of Mozzarella Do not skip the second egg wash coating or your Mozzarella will ooze out while frying! The last coating is in Panko, to get very crispy and crunchy crust
I use peanut oil for deep frying, it has a high smoke point so it’s perfect for frying. But you can use your favourite oil. If you don’t have a thermometer to check the oil temperature, you can make this test: the oil is ready when a wood spoon handle will fry
Don’t fry them too much or Mozzarella will ooze out. This is one of the best party appetizer ever! Don’t you think so? So crispy!! Let me know if you like this video and stay connected for more! Have a great weekend!
