I’m not a fan of mayak eggs bc too sweet.
I like egg jangjorim. Or quail egg jangjorim. Meat is optional.
Instead of water I use dashima anchovy broth (dried shitake, daikon, dashima anchovies scallion ends onion ends and an apple with few bay leaves. Take some with soy sauce, mirim, bit of sugar boil with hard boiled eggs woth peppers and some of the shitake mushrooms I used to make the broth. It’s more salty and umami-y than mayak eggs.
i used a recipe i found on youtube a long time ago… can’t remember the channel but i used oyster soy sauce from the korean market… and instead of honey just regular sugar. serrano chili too.
Adjust the recipe , less sugar more chili peppers (Thai) for more spicy.
Don’t add the sesame oil till your gonna eat it .
Maanchi’s version of gyeran-jangjorim is my fav. Perfectly savory and pretty easy to make. I also didn’t like the sweetness of mayak eggs. https://www.maangchi.com/recipe/gyeran-jangjorim
