I’m usually served this purple rice in restaurants which isn’t what I’m used to seeing in western countries – what is it? Why the difference?

Bean rice? My family eats them since my mother is diabetic.

that’s 흑미밥 or korean purple rice. it’s made by mixing white and black rice together. it’s really good and honestly i prefer them over plain white rice.

Black rice mixed with regular rice. Supposed to be healthier and gives rice the dark purple hue. Not sure how accurate below article is but it states that anthocyanins are reason for the color.
“Compared to regular brown rice, black rice is **higher in protein, iron, and fiber**. The anthocyanins responsible for its dark purple hue also supply powerful antioxidants. Beneficial nutrients in black rice include: B vitamins like riboflavin, niacin, and folic acid: These support energy production and brain health”
