Cottage Pie – A hefty slice for 435 calories

    You could make this a little lower calorie by using leaner ground beef or even ground turkey, and you could also use light sour cream instead of full fat, but I like full fat Breakstone’s because it has live cultures. You could also swap the cheese for fat free.

    To prep, chop your potatoes and get them boiling. I leave the skin on. Then chop the onions and mushrooms. Heat up a large skillet and add the ground beef, onions, and mushrooms and cook until the meat is browned. Then add minced garlic, soy sauce, tomato paste, salt, pepper, paprika, oregano, thyme, and rosemary.

    Next, add the frozen mixed veggies and the broth, bring to a boil, and then simmer until the liquid has mostly evaporated.

    Meanwhile, strain the potatoes, then add the sour cream, sauerkraut, salt to taste, and garlic powder. Mash until smooth. Trust me on the sauerkraut. You won’t taste it. It basically melts into the potatoes, while adding more nutrients and beneficial bacteria.

    To assemble, use a casserole pan and spread the meat/veggie mixture evenly. Then top with the mashed potatoes, creating peaks with a fork. Add the shredded cheese and then broil on high until browned. Watch it closely or it will burn.

    Top with sliced green onions before serving.

    This recipe makes six 346 gram servings.
