Forget about dinner and go right to dessert. You have to try this Egyptian dessert. This is “atayef”. Atayef is a sweet dumpling, and it is a popular dessert to serve during the month of Ramadan. Here are the ingredients for this atayef recipe. First off, the simple syrup. Combine equal parts water and sugar.
Bring it to a simmer. Add the juice of half a lemon. Turn off the heat, and add vanillin with sugar. Let this cool down to room temperature. Now the filling. Combine walnuts, shredded coconut, golden raisins, and ground cinnamon. Now the pancake batter. Combine flour, salt, sugar, baking powder, and water.
Over medium low heat, add butter and pancake batter. Do not flip the pancake. When the top layer is no longer wet, remove it from from the heat. Add the filling to the center of the pancake. Pinch it closed to form a half moon shape.
