When you juice limes, all the flavor is really in the oil that's in the peels. And you're just throwing that out!! If you extract that oil and balance it with citric acid (which also has the added effect of emulsifying the oil in water) then you can truly unlock the potential of citrus! It tastes just as good as plain juice.

  • Peel 2 limes and weigh the peels.
  • In a water tight container, mix peels with malic acid (1/3 of the weight of the peels) and citric acid (2/3 of the weight of the peels). Let sit for 1-2 hours.
    • Note: At this point you can change these ratios to do "acid adjusting", which means you can have orange juice that's just as tart as lime juice, or lemon juice that's as sweet as OJ.
  • Juice the peeled limes. In a blender, mix water (16x the weight of the peels) with lime juice and the acid/peel mixture (use water to rinse out the container).
  • Blend, strain and enjoy!
