


Super excited to start this journey! First fresh bite tasted amazing, now sitting on the counter to start the fermentation journey. Any recommendations on how long to let it sit on the counter before I put in the fridge? And can I just leave it in this container, or is the exposure to air a concern? Would a piece of Saran Wrap tight over the food and then the lid be better?

Looks great, I would eat it right there without waiting for fermentation
Looks great! I think it you can put more cabbage, and you can also slice them a bit bigger next time! Also, make sure that the julienned veggies are fully soft within the marinade. They should have almost no snap left in them.
