Photo is from LA chain Tocaya, but I pretty much did a riff on the above: grilled chicken with a variety of seasonings, grilled pineapple (used a no sugar Dole cup), cilantro lime rice (in my case Trader Joe’s Spanish rice), black beans, quick pickled onions, queso fresco (left that out) & guacamole. If I made it like they do it would’ve been 640 calories. Think my version was significantly less. Also used the juice from the pineapple cups mixed with a fat free Greek yogurt as a sauce. Super tasty.

    This looks SO good. I’d prob have a bed of greens under and/or some tomato salsa with it, but what a nicely balanced tasty lookin meal.
