Puerco Pibil, a lovely slow roasted pork I made with Habanero and chipotle peppers.

I learned this one way back from Robert Rodriguez on the Once Upon a Time in Mexico DVD. A favorite of the family and regular on the old home menu. I prefer it with a smoked margarita but equally good paired with Tequila.
