Ingredients:
– 4 bell peppers (119 cals)
– 500g lean beef mince (840 cals)
– 200g cauliflower rice (38 cals)
– One/150g onion (44 cals)
– 70g low fat cheese (195 cals)
– two sachets of taco seasoning, paprika, cumin, salt, pepper and optional tajin seasoning
– Fry lite spray

Recipe:

  • Preheat the oven to 180°c fan/200°c conventional oven and begin to half your bell peppers removing the seeds and white bits inside during the process.
  • Once the peppers are halved and prepared, spray them with a bit of fry lite before placing them on the tray and sprinkling some salt, pepper, paprika and tajin over them. Put into the oven for 15-20 mins.
  • Heat up a pan to medium high on the hob and chop your onion into small pieces. Begin to cook that in the pan either dry/water or with a little bit of oil (I used the dry method) until browned. Sprinkle the onions with some paprika and cumin for the last few minutes.
  • When the onion is ready, add in your beef mince and brown. Once browned, pour in two packets of taco seasoning along with a splash of water and some chilli flakes if you like spice.
  • When the peppers come out of the oven, stuff them with the contents of your pan and sprinkle cheese on top before placing them back in the oven for another 12-15 minutes to melt the cheese to your liking.
  • Sprinkle some more tajine on top when they come out of the oven and serve! This recipe makes a total of 8 half peppers which is enough for two portions.
