I make kenji’s esquites for my family all the time and this is my first time using frozen corn. It was a hit (of course) but this time came out a lot creamier possibly because I usually use very large corn cobs and this time followed the volume measurement for corn since they were frozen kernels
I love how adaptable the recipe is, but has anyone ever tried broiling the corn in the oven instead of charring it in a pan? I’m looking for even more hands off methods of getting this deliciousness into my family’s mouthes, especially as summer and good fresh corn gets closer

I haven’t tried broiling the corn, but when I REALLY want to be hands off I use frozen fire roasted corn. Trader Joe’s has it and I’m sure other stores do as well.
