

Ingredients:
- One Fat Ass Chicken Breast
- Grape or Cherry tomatoes, cut in half
- Oil
- 2 tbsp Pesto
- mozzarella
- Salt
- Cracked pepper
- Italian seasoning
Directions:
Coat chicken generously in salt and pepper. Prepare chicken breast however you prefer. The name of the dish is “grilled” but I don’t have a grill so, I put it in the oven at 375 degrees for about 20 min/until internal temp is 160 degrees.
Add oil and tomatoes to a pan on medium heat with salt, pepper, and Italian seasoning to taste. Reduce to low and cover. Let simmer for about 10 minutes or until tender, stirring occasionally.
When the tomatoes are done and the chicken, slice mozzarella to cover chicken. Remove tomatoes from pan and place chicken in the pan with some water. Cover and let the cheese melt.
Heat pesto.
Place food in this order on plate: chicken, pesto, tomatoes, cracked pepper.
I’m a self taught and learning cook so I hope my directions are useful and make sense. This is my favorite dish at Olive Garden because not only does it taste good but I could eat my fill of carb heavy breadsticks and appetizers without getting full immediately (back when I was eating carbs.)

Also you definitely don’t have to make as big of a portion as I did. I was hungry. lol
