    That looks similar to one we had but it used sweet potato instead of carrot. If it is the same (coconut milk, soy, lime juice, garlic, ginger I think is the base, poss a couple of other bits) you can basically add anything to it, we’ve done it as a fish stew, veggie with squash and aubergine, with prawns, all sorts. We have it about every other week as it’s so easy to make and tasty!

    I cheat on this and use a whole can of coconut milk (and not the added water). I can’t believe how good it is!

    We really liked this as well! We added another pack of chopped chicken and some extra carrots to bulk it up a bit but it was one of the best meals.
