I'm planning to cook the whole chickens in my crockpot and use the other ingredients for various soups. I have pancake mix for muffins and dumplings. Does this looks like a good shopping list for about 2 weeks for one person? This is under budget so please let me know if I'm missing anything!

You may want to add some veggies & a meat. If you don’t have funds, you can get canned cheap on both or hit a food bank. Also, go to Aisle & Social Nature. They have some decent items that you get 100% back on. This week, my favorite freebie is a 3lb bag of Cara Cara oranges I got from Walmart using Social Nature.
I would take off one container of oats and get some more fruits and veggies. One container of oats has 30 1/2 cup servings, so I would think 1 would be plenty for 2 weeks.
I might just be faded, but this is like 1 week of groceries for me. Please make sure you’re eating enough, If money is super tight, I think there are places you can ask around. A friend of mine got a carpet cleaner bought for her on some page where rich people look to pay it forward. Never guaranteed but worth a shot if that’s the case, do not feel obligated to state if it is or not, just know.
Looks pretty good actually. And yeah you can add more frozen veg/fruit (equally as good for lots of purposes, and usually WAY cheaper and around all year compared to fresh).
Add some canned fruit and veg for sure. Super cheap and lasts a long time. Canned peaches are a great oatmeal topping.
Bouillon cubes and soup packet mixes have a lot of spice in them and the soup packets usually have a thicken, which is great to add to stuff.
The app Meal Lime or Sorted Food has a bunch of recipes that overlap ingredients that make for easy and cheap shopping.
One person, 3lbs of onions?
That’s a questionable choice unless you’re planning on making French onion soup. Most will probably go bad.

If you have a pot, I’d recommend a few bear creek soups. They’re like $4, but for one person, you could probably eat for 2-3 days on it, and they’re pretty good, and only require water and like 15 minutes.
I like to also get a cheap loaf of white bread and tear up like 2 pieces for 2 ladles of soup and mix it in, it’s like super fast dumplings and helps stretch the meal.
You’re buying two small chickens to last 2 weeks? Hmm. You know what, If you cut them into pieces you can probably have them last for a good bit. I hope you won’t get sick of eating chicken
