1 cup = 250 ml; Tbsp. = Tablespoon = 15 ml; tsp. = teaspoon = 5 ml
Ingredients:
750g Pork Ribs
ยผ” Ginger
2″ Cinnamon Stick
ยผ tsp. Turmeric Powder
ยผ tsp. Cumin Seeds
8 Garlic Cloves
6 Cloves
10 Dried Kashmiri Red Chillies
1 ยผ cups Onion
ยผ cup Tamarind Water
5 Tbsp. Vinegar
2 tsp. Sugar
3 Tbsp. Cooking Oil
Salt to Taste
Serves: 4 -6

This dish reminds me of its beef version cooked in Mangalore the old fashioned way in the family kitchen over wood fire and in earthy seasoned utensils. Absolutely love this recipe! Always turns out better than the last time. I use a mix of chilli flakes and paprika to balance the spice level and colour (this is because I don't really have access to Kashmiri chillies where I live). Keep up the good work, Fatima ๐
