We may have been without a kitchen for the last 4 weeks, but we are still meal prepping every Sunday so that we can make healthy choices throughout the week while both working full time and getting to enjoy our evenings with our kiddos. It’s my goal to help you do the same.

Cucumber & Tomato Salad Ingredients:
3 large English cucumber, chopped
30 oz cherry tomatoes, halved
1 red onion, diced
1/4 cup olive oil
1/5 cup red wine vinegar
3 TBSP honey
salt and pepper to taste
1/4 cup fresh dill

That’s it. Literally, put it all together and let it marinate. It’s amazing and it’s been on repeat this entire renovation!

Coleslaw Ingredients:
3/4 cup avocado mayo
2 TBSP apple cider vinegar
1 TBSP Dijon mustard
1 TBSP pure maple syrup
3⁄4 tsp celery seeds
1⁄4 tsp sea salt
Salt and pepper, to taste
3 (14 oz) bags of coleslaw mix

Mix all seasonings and wet ingredients together to make a dressing and pour over your coleslaw mix and enjoy! This one will be a new family favorite.

Crockpot Collard Greens Ingredients:
2 (32 oz) fresh, shredded collard green bags
1 TBSP extra virgin olive oil
1 sweet onion, diced
1 TBSP garlic, minced
1⁄2 tsp red pepper flakes (if you like heat 😉)
4-5 cups chicken broth
1-2 smoked turkey legs (find in your meat department)
1 TBSP white distilled vinegar
Salt and pepper, to taste

On bottom of a large crockpot, add olive oil, onions, garlic, red onion and top with collard greens. Mine is right, but they all fit. lol.
Pour broth, vinegar, salt and pepper on collard greens and add turkey leg on top. Close the lid and cook for 4 hours on high or 6-8 hours on low and I guarantee you will help any veggie hater into a veggie lover. Our family request this recipe for every holiday get together. They are amazing.
