This side up or down?

    Is this the fat side that goes down, or is the other side (which has the fat cap) the fat side? Thanks

    There’s a lot of debate on this. I’ve tried it both ways and prefer fat side down.

    I’m a fat side up. I like that fat to render down into the meat with the seasonings in it. But haven’t noticed much of a difference.
