Sometimes I'll have a light lunch (I don't eat breakfast because of IF) to prepare for a big meal like this to keep me full until lunch next day.
Quinoa and kale Mediterranean salad (including cucumber, red onion, olives, feta cheese, lite Italian dressing) – 6oz Salmon (simple pan fry) – roasted balsamic tomatoes (roasted in oven with garlic, lemon juice, balsamic vinegar and basil)

We had salmon tonight, too! Large (8oz) portion because we’re headed out of town & needed to use it up! Seasoned with brown sugar, paprika, & lemon zest. Side of red potatoes. 577cal.
