Roasted with grapes for a sweet burst and brushed with a rosemary butter, this roasted chicken dish is an easy family dinner delicious with crusty bread. Curtis Stone’s roast chicken thighs with grapes & rosemary
Serves 4 Cooking 25 mins Prep 10 mins + cooling time
8 Coles RSPCA Approved Chicken Thigh Fillets, trimmed
2 tbs olive oil
4 shallots, halved
4 rosemary sprigs, divided
300g red grapes, separated into small clusters
1 cup (250ml) balsamic vinegar
30g butter
4 slices Coles Bakery Stone Baked by Laurent Pane Di Casa*
1. Preheat oven to 200°C. Season the chicken with salt and pepper. Heat the oil in a large heavy-based frying pan over medium-high heat. Working in 2 batches, add chicken and shallots and cook for 3 mins. Turn chicken and cook for 2 mins or until light golden.
2. Transfer the chicken mixture to a baking tray. Top with 3 rosemary sprigs. Arrange the grapes around the chicken. Roast for 12 mins or until the chicken is cooked through.
3. Meanwhile, in a small saucepan over medium heat, bring vinegar to a simmer and cook for 15 mins or until reduced to 1/4 cup (60ml). Set aside to cool.
4. While the vinegar is cooking, heat a chargrill on medium-high. In a small frying pan, melt the butter with the remaining rosemary sprig. Brush the rosemary butter over both sides of the bread. Cook on the grill for 3 mins each side or until lightly charred.
5. Transfer the chicken mixture to a platter. Drizzle with vinegar reduction and serve with chargrilled bread.
