Grilled Cherry Balsamic Glazed Chicken
In this video I’ll show you how to make this grilled chicken meal. It is a HelloFresh inspired recipe. The Cherry Balsamic Glaze was an great pairing with the flavorful grilled chicken breast. The grilled chicken cutlets came out very moist, and the Cherry Balsamic Glaze kicked up the flavor even more.

The first step is to light your charcoal. I absolutely love Weber products, and I can’t say enough about the finish on their grills. It lasts forever! Next you are going to prep the veggies. We’ll us carrots, scallions, and garlic. Peel the carrots, then cut them into 1 inch pieces on the bias (aka diagonally). Mine two cloves of garlic. Thinly slice the scallions, separating the whites from the greens.

For the couscous, start with melting some butter and heating up the garlic until it gives off a nice aroma. Then add a handful of sliced almonds, followed by the couscous. Brown the almonds and couscous to give them some extra flavor. Once browned, add your water. Bring this to a boil, then reduce the heat to a slow simmer until done.

Toss the carrots with salt, pepper, and olive oil. You are going to cook them for about 15 to 20 minutes at 400 degrees. I put them on the cast iron skillet that I just got last week. Now let’s prep the chicken. Season them with the garlic sea salt and pepper to taste. Just before putting them on the grill, coat both sides with a thin layer of olive oil.

The sauce was pretty amazing. Start with a tablespoon of butter, melting it on your skillet. Add the scallion whites and sauté them for a bit. Then add 1/4 chicken stock, and about 1oz of cherry jam. Simmer this until reduced to a thick sauce, but be careful not to go too far and burn it. It will thicken even more when you remove it from the heat. Then add two tablespoons of butter to make it even more glaze-like.
