Hello! My next 5 Family Meals for UNDER £25 from Aldi, Spring Edition is now live! Budget, Healthy, nutritious and delicious family meals, each meal feeds 4 – 6 people, some one pan meals included to (love a dump and go meal plan!) plus these are all in season, Spring 2024 meals, using Spring vegetables etc. ENJOY!

Shopping list:

5 For Under £25 SPRING 2024

Spring Chicken Veg Pie
– 6 high welfare chicken thigh fillets (also works great with leftover chicken from a Sunday roast, taken off the bone) £3.99
– 1 bunch spring onions, sliced £0.59
– 1 large bowl worth of spinach (I use frozen spinach straight from the freezer!) £0.65
– 360ml Chicken stock (cupboard essential)
– 1 heaped tsp of wholegrain mustard £0.65
– A bowl of frozen peas £0.30
– 200ml crème fraîche £0.89
– Small bunch of coriander, chopped (tarragon would work well!) £0.52
– Olive oil, salt, black pepper (cupboard essentials)
– Filo pastry £1.90/80p (using half!)

Pulled Pork Teriyaki and Pickled Veg Wraps
– Ready made pulled pork/pork shoulder (would need to slow cook until shredded) £2.99
– Teriyaki glaze/sauce from Aldi £1.39
– 2 carrots, peeled and grated £0.10
– 1 bunch of spring onion, chopped (2/3’s pickled in vinegar solution)
– 1 bag of radish, sliced (pickled in vinegar solution) £0.59
– 1 large white onion, sliced (pickled in vinegar solution) £0.30
– 1 pack of mini wraps £0.60
– 1 cup of rice, cooked (cupboard essentials)

Yogurt Spring Veg Flat Breads
– 2 cups self-raising flour (cupboard essentials)
– 2 cups greek yogurt £0.79
– Asparagus , washed £1.29
– 1 bunch of spring onion, sliced
– Plum tomatoes, cut in half £0.75
– Feta cheese £0.89
– Garlic (or garlic infused oil) (cupboard essentials)
– Olive oil, salt (cupboard essentials)

Mushroom Risotto (Simple but delicious)
– 1 pack of (preferably) mixed mushrooms, sliced £0.95
– 1/2 pack of chestnut mushrooms, sliced
– Dried mushrooms are not essential, however if you have them, a few of them would be lovely
– 1 litre veg stock (plus more hot water if needed for desired texture) (cupboard essentials)
– Parmesan cheese, grated £1.59
– Risotto rice (measured for 4 – 6 people)
– 1 large glass of dry white wine £3.45/2 = £1.75
– Chopped coriander or parsley
– 1 white onion, sliced
– 1/2 bulb of garlic, crushed (cupboard essentials)
– Olive oil, salt and pepper (cupboard essentials)
