Question.. I recently started canning. I was canning pork butt and when my Presto 16qt. canner started steaming I inadvertently put the weight on..without waiting the 10 minutes to vent steam.. SO, I added 10 minutes to my time..BUT then I ALSO realized I didn't do the 5 minute wait for the "rocking" of the weight..SO I added an additional 5 mins to my time.. so instead of my 75 minutes canning time I went 90 minutes to compensate..
All my jars sealed. I did wait until it cooled down completely(of course)and then some.. I also DID wipe all of the rims on my jars before lidding them up..
Am I ok..do you think my pork that I canned will be ok?

When you chop onions. When you chop them dont use the Same hand to wipe your eyes with because that will make you cry more
