Welcome to Fyreflye’s Follies!
If you enjoy today’s video, please don’t forget to give me a thumbs-up! If you enjoy videos featuring canning, dehydrating and (mostly) southern cooking, I hope you will subscribe!
In Today’s video, I will show you how I can sausage gravy for shelf-stable storage. I am doing these for a friend who drives a truck long-haul. I simply use a packaged gravy and cooked sausage, then process for meat times.
Not everything I do is USDA/FDA approved. I believe in “MY KITCHEN, MY RULES” and I do not think untested necessarily means unsafe. If you are someone who only does things by the book, then this video may not be for you. It works for me.
I am not telling anyone that this is the way it should be done. I am only sharing with you how I do it in my kitchen. I have done my research and I am comfortable with doing it this way. I strongly encourage you to do the research and do what works for you. The National Center for Home Food Preservation is a great resource, as well as the Ball website. I have left a link below. There are also several groups on Facebook and lots of videos on YouTube to help you get started and find information.
Feel free to leave a comment below. If you have a question, I will try to answer it or help you find a resource to get an answer from.

Has anyone tried to can their own Homemade Milk sausage gravy?
I would love to do this, I came across some milk that's discounted due to one day approach from the expiration at the local store, every once in a while. I make a ton of Milk Gravy and freeze but it become really thin.
I want to do this but going to use a 10# can how long should I process that?
Did meatloaf (6 qts & 1 pt, from 10# meat). Last month. Really tasty.
Pretty excited for this. Ordered my pressure canner yesterday! Thanks for all you do.
Could you go the gravy from scratch rather then a prepackaged mix. I’m assuming so.
Can you re can from a restaurant size can on sausage gravy . Please reply
New subscriber will be canning the sausage gravy. How many pounds o f sausage did you use? Also how much water did you add to sausage God Bless
How long would you pressure cook without the meat?
Love your videos!
I think u the most creative canner.thanks for sharing
Is this gravy mix found someplace special?
I am going to try and re-can #10 can of sausage gravy I saw at Sam’s Club
Where did u purchase the Morrison’s instant gravy mix? I have only seen individual size packets GV and pioneer at WM.
I think we could mention that canning a “not approved” recipe is safER because canning in half pint or sometimes pint jars IS actually safer. Example is canning clam chowder soup base. It’s recommended that you can only in half pints or pints. Why?…because the processing heat needs to reach and maintain a safe heat throughout, and to the middle of the jar. It’s not recommended to can many recipes, including clam chowder base, in quarts. Sometimes you need to just use common sense, and what you said “just because it’s not approved, doesn’t mean it’s not safe” is absolutely correct. Err on the side of common sense and make sure that processing time is correct and assume shelf life is shorter in any recipe that is not “approved” and never, ever, store canned food with the ring on or set other jars on top of each other without a barrier. I’ve actually canned this sausage gravy in pints and half pints and they didn’t make it to even six months lol anyway. TY FF.
What would the processing time be, if you used no meat ? Wanting to can some for my 88 year old mother.
I use to drive truck, I would have killed to be able to have this on my truck lol
Thanks for sharing!
I love these video's. My hubby is a trucker also.
I hope your truck drivers friend pay for the supplies and return your jars. I can understand your doing a good thing for them but food cost now. I can understand you not doing so to make a profit. You are an angle to do this.
I’m going to give this a try in the morning! I have all the ingredients so I’m excited to give it a whirl! I hate to admit it, but sausage gravy over biscuits is my all-time favorite meal (breakfast, lunch or dinner)! Thanks for the canning recipe.
I'm wanting to make beef or chicken or turkey gravy to can. Do you think it would be the same?
Please do a video about Re-canning sausage gravy. We ended up with several #10 cans of it. Way to much for our family of 2. I want to use it but if we open most will go to chickens. We have no room in freezer. PLEASE HELP! Suggestions? Times? Help!
Rebel test kitchen 🙌🙌🙌 thank you for absorbing that time/cost for the rest of us. Its so appreciated. ❤️
I just want to say… I ❤️ your videos so much. You bring me joy and keep on being a rebel canner! Idk where you are from but I would totally can with you.
I am a otr driver also and I love to eat Biscuits and Gravy all the time. Please let me know what else you can can because I do bacon, bbq, black pepper chicken among other foods.
I make my sausage gravy with evaporated milk (canned milk). I don't understand why it's OK for the stores to can the gravy & milk, but not OK for us.
What about homemade sausage and gravy? Would I prep it the same way? Please and thank you.
If you just make gravy with no sausage what would be the processing time for 10lbs pressure?
Love this video, but only have two question.. can I do this with homemade gravy using flour and canned milk ( evaporated) ? If so would the steps be the same ?
instead of packet gravy can i do this with flour from scratch?
Me and my honey ate a jar yesterday that I canned back in November of 2021 and it was delicious
I am the only one who eats this and I love it. By processing it in 1/2 pint jars there would be no waste.
How long will the last when your done
Is there a rebel canning cookbook ?
I was so excited to try this. Unfortunately every single jar syphoned bad. I left a generous 1” HS. But was way to thick & I think that was the issue. Where did I go wrong ? I wanna try again
I've been thinking of trying it from scratch…milk, flour, sausage…..I don't see why it won't work…
I heard one pop at the end. Love that sound
This also works if you use canned cream soups to make sausage gravy. I canned some 7 months ago. Just had one for breakfast today and it was great.
Thank you for sharing, perhaps I missed it…. how much water should we have in the cooker?
1:18 I love you already!!!! 🙏🏼
Good job!!!
Good morning can you canned homemade milk gravy?
I loved your introduction and yes I am comfortable also canning sausage gravey.
Ok I have canned sausage gravy like u did. Using morrison gravy mix. I asked one of my rebel canner groups a question. I'm getting replies back bout milk. I'm thinking drama crap. Can u tell me if I can gravy without any meat how long do I need to can just gravy. Also, can u direct me to some rebel canner groups that will answer questions without going into stuff I shouldn't be doing.?
Have you tried to can sausage gravy made the traditional way? I'm not fond of the store bought packet gravy mixes. I know your not "supposed" to can with flour…
Would use gravy from large resturant size cans to can in pint size jars.
The FDA wouldn’t approve of the way the Amish can either, but I’m fairly certain they’ve had no issues
I don't have a pressure cooker, I'm going to try water bath 1:30hr rolling boil & pray over it 🙏😊
Can you do this on a glass stove top as well?
Where did you get that pot? I see everyone with it and I want one too.lol
