BETH’S EASY TORTELLINI SALAD RECIPE
Serves 4
INGREDIENTS:
1 lb (450 g) of 3-Cheese Tortellini
1 cup (230g) of store bought pesto
1 cup (230 g) sliced cherry tomatoes
8 oz (230 g) Mozzarella Peals, drained
½ cup (75 g) pitted Kalamata Olives, sliced
3 tbsp (45 ml) fresh basil, sliced into ribbons
METHOD:
Cook tortellini according to package instructions. Drain pasta and allow to cool slightly.
Transfer pasta into a large mixing bowl. Toss pasta with pesto until well coated. Add tomatoes, mozzarella, olives and fresh basil. Toss to combine.
Cover salad and refrigerate until ready to serve!

Beth, I just wanted to let you know that this recipe came at the perfect time. I made it for my daughters wedding reception. It was received very well and is my new favorite salad. We left out the olives since she hates them. It was wonderful! Thank you so very much!

I've actually been making a version of this salad for a while and I absolutely love it 🙂 I put in sort of pickled artichokes instead of olives and it's yummy 😉 but I'll try it with olives some time 🙂

I think I would add artichoke hearts and maybe swap the cherry tomatoes for sundried tomatoes. Looks really good!

I am a new fan of your channel, but I also love America's Test Kitchen, so I wanted to pass on a tip I learned from them on cutting several cherry tomatoes. Get 2 round, small, plastic lids, the kind that come with glass containers. Put one lid face up, place one level of tomatoes, and place the second lid face down. Hold securely, but don't smush the tomatoes, and cut horizontally. This way you cut about 8 tomatoes at once instead of one at a time.

I was wondering on how I can find more picnic recipes when I set up dates. Do I google picnic recipes, or do you have better recommendations? I saw Beth's picnic for 2 it's a great video but I don't want to cook the same recipe all the time. Any ways to find more picnic recipes? I'm stuck on finding extra recipes.

but a way to cut cherry tomatoes in just one cut. Beth by placing two plate that the size is equal with the tomatoes in between the plate and cut through and done

I think I will make this but use spinach tortellini if I can find it dairy free (allergic) and also dairy free pesto if I can find it, also I'll skip the mozzarella and add some sweet pepper rings.
