Instead of the normal cage, this wine has a solid metal collar around the neck and a thick loop of metal around the cork that is welded to the solid metal collar. I’ve never seen this before, and called a few somm friends who had also never seen this. We can’t saber it because the glass neck is protected by the metal collar. My only thought is pliers but that doesn’t seem right. Any thoughts?

To answer your question they twist off with a bit of pressure and then you just open it like a normal corked bottle of sparkling.

It’s called an ‘agrafe’ – a few makers use this. I’ve seen it with Henri Giraud. They give you a fancy little tool but you don’t need it. Just use your normal ‘waiters friend’ corkscrew / opener but use the beer bottle opener bit to hook through the side and pop the metal piece off using a bit of pressure. Then remove cork normally. Be careful as you would for any champagne that the cork is pointed away in case it pops off straight away after removing the metal agrafe.

Is it ever wrong to open champagne with a sabre?
