
It’s appie night here and I wanted to make something special for my keto eating family. I saw a post recently for these pigs in blankets and I just had to try them!
The recipe is pretty easy.
1.5 cups mozza
1oz cream cheese
1 egg white beaten (save the yolk for an egg wash)
1/2 cup plus 2 TBSP fine almond flour
1/2 tsp baking powder
Melt the cheeses in a microwave safe bowl in 30 second increments until melted. Stir between each microwave session.
Mix almond flour and baking powder in separate bowl, whisk the egg white in another bowl until frothy.
Add the dry ingredients to the cheeses, start to mix with your hands (careful, it’ll be warm) and then add the egg white. Knead quickly until a dough is formed, cut into as many pieces as required.
I cut my package of hotdogs into 18 pieces so I made 18 bites but you could wrap each hotdog individually if you didn’t want these as a snack or appetizer.
Place wrapped hotdogs on a lined baking tray, brush with egg yolk and sprinkle with everything seasoning. The seasoning is optional but it did add a nice crunch and a little extra flavour.
Bake at 350 for roughly 25-30 mins or until brown.
