it is nearly blueberry season and so for
the next couple of weeks I’m hoping to
develop a lot of very themed recipes but
today is going to be blueberry pancakes
I took my regular pancake recipe and
just made a few small modifications to
make the blueberry pancakes and today
I’m going to show you exactly how to
make those in the description box below
I’ll make sure and link to the printable
recipe so you can go in either print it
out if you want to save it to Pinterest
you can also do that from there all
right let’s take a look at those
ingredients alright this recipe is going
to start out with four eggs two and a
half cups of almond flour 1/4 cup of
avocado oil you can substitute 4
tablespoons of melted butter you’re
going to have 2 teaspoons of vanilla
extract between 1/2 and a full cup of
blueberries make sure they’re the
smaller blueberries you’re gonna have a
half a cup a swerve sweetener 2
teaspoons of baking powder 2 teaspoons
of cinnamon some people might think
that’s a little too much my husband just
likes a lot of cinnamon flavor in his
foods and this is about 1/4 teaspoon of
salt and then 1 cup of almond milk one
of my favorite parts of this kind of
recipe is that everything can go into
the bowl at once and be mixed up so
literally everything except the
blueberries are gonna get piled into a
large bowl I’m gonna mix it with a
electric hand mixer and then what’s the
pancake batter is all gonna mix up it
will stir in the blueberries

now I’m gonna let that pancake batter
rest for a little bit while we heat up
the griddle to about 375 degrees
Fahrenheit once it’s heated we’re going
to scoop out the pancake batter and
about 2-3 tbsp increments to make the
pancakes and I’m gonna use coconut oil
to make sure that the pancakes don’t
stick to the room pancake batter is
rested their griddle appeared and so now
I’m gonna start making our pancakes and
to use the coconut oil I don’t really
measure out I just kind of put enough on
there so that it’ll melt and again keep
the pancakes from sticking and once the
grill is heated it really doesn’t melt
very quickly you want to scoop up you
want to scoop out about 2 to 3
tablespoons of batter you can make
bigger pancakes but then you’re gonna
have a really hard time cooking them so
I really just suggest no more than no
more than 3 tablespoons and time you put
on there kind of spread it out and this
should make anywhere between 15 and 20
pancakes or depends on how big you make
the pancakes so like I said the bigger
you make them the part of a artists slip
these will fluff up like wheat pancakes
that’s one thing I love about this
recipe but they are they still behave a
little bit differently and so they don’t
flip over quite as easily and seamless
as a weak pancake so you want these to
cook almost all the way through and just
like a regular pancake you will start
seeing evidence on the top of hand cakes
when they are rate and when they’re
ready to flip over you’ll see small
little bubbles and we’re starting to
open up on the top and that’s what you
want to flip them over if you wait too
long of course when they’re burning the
bottom of it and not believe me upper
and plenty of pancakes as you can see
here you can actually you see these you
have little bubbles forming on the top
and really you don’t need more than 2 to
3 minutes on each side really enforce
really about 2 minutes on the first side
and then the second side needs even less
time I think this first batch is getting
really close to being ready to flip just
kind of check it underneath again if I
flip too early then it’s gonna fall
apart on me
blueberries falling out there’s one
bring it for a closer look to see how
they’re they’re definitely puffing up
and the owners are really like using the
coconut oil if these edges start to get
just that tiny little bit of Cristina’s
term which I really love on my pancakes
all right the first batch is ready to
come off the griddle and you know
they’re not perfect pancakes or not get
full of perfectly round but they are
wonderfully tasty so I’m gonna finish up
picking these up a griddle and then I’m
going to make the rest of the pancake
that but I’ll be right back as soon as I
finish all right once you’re done all
the stuff to do is put a little bit of
butter on top which I already did and
it’s already melted and then top it with
your favorite syrup
I like the LeConte oh brain maple
flavored syrup I personally think it is
the best on the market so I’ll make sure

tablespoons of the serpent all you need

amazing so it’s actually dinner time
