½ LB SQUID
2 DZN MUSSELS
½ LB SCALLOPS (OPTIONAL)
1 DZN CLAMS (OPTIONAL)
½ LB MONKFISH, GROUPER OR OTHER FIRM WHITE FISH MEAT
12-16 EXTRA LARGE PRAWNS IN SHELLS (HEADS OPTIONAL)
¼ LB SPANISH CHORIZO
7 CUPS CHICKEN BROTH (KEEP HOT)
6 T OLIVE OIL
1 LARGE ONION, FINELY CHOPPED
1 LARGE RED BELL PEPPER, FINELY CHOPPED
2 MEDIUM ROMA TOMATOES, FINELY CHOPPED
3 tsp SMOKED PAPRIKA
3 CUPS SPANISH BOMBA RICE
½ CUP FROZEN (OR FRESH) PEAS
LEMON WEDGES FOR SERVING

HEAT PAELLA PAN
SAUTE PRAWNS DRY AND REMOVE (ABOUT 2 MINUTES)
ADD 3 T OIL AND HEAT
SAUTE CHICKEN, PORK AND CHORIZO AND REMOVE (ABOUT 2 MINUTES)
SAUTE FISH AND REMOVE (ABOUT 2 MINUTES)
SAUTE SQUID AND REMOVE (ABOUT 2 MINUTES)
SAUTE SCALLOPS (IF USING) AND REMOVE (ABOUT 2 MINUTES)
ADD 3T OIL TO PAN
ADD ONIONS AND PEPPERS, COOK ABOUT 2 MINUTES
ADD TOMATOES, COOK ANOTHER 2 MINUTES
ADD PAPRIKA AND RICE
ADD 6 CUPS HOT BROTH, BRING TO A BOIL (keep 7th cup in reserve)
ADD GARLIC/PARSLEY/SAFFRON MIXTURE
MIX WELL TOGETHER CONTINUING TO BOIL FOR 3 MINUTES
ADD FISH, PORK, CHORIZO, SQUID, PEAS
BOIL 2 MORE MINUTES, UNTIL RICE IS NO LONGER SOUPY
ADD CHICKEN, PRAWNS, MUSSELS AND CLAMS (IF USING)
COOK 12-20 MINUTES UNTIL RICE IS AL DENTE
(note: if liquid is evaporating too quickly add more broth from 7th cup of broth)
COVER FOR 5-10 MINUTES WITH FOIL
SERVE WITH LEMON WEDGES

we had party yesterday where I cooked P
for 15 people and I have a lot of raw
ingredients left I actually bought more
than I needed so I thought I’ll make paa
today just for myself and my wife this
paa will have a lot of extra stuff in it
volume Wise It’s not going to have two
things that I usually put in Squid and
fish but we have so much scallops shrimp
and that that it’s really not needed so
let me take you first through what we go
in there so here are ingredients of
course rice and it has to be bomber Riz
Aroma Tomatoes Spanish cheresa sausage
pork loin chicken as a matter of fact I
think genetic Engineers should develop
chicken with four thighs as the breast
is just overrated scallops prawns
muscles clams green peas meshed garlic
mixed with Italian parsley and saffron
paprika roasted red peppers olive
oil chicken
broth here are our
ingredients oh I forgot another
ingredient you absolutely have to have
glass of red with that and you know
