today I’m making canoli so starting with
uh two cups of white flour 2 tablespoon
of brown
sugar4 of a teaspoon of
salt and I’ve um cut up three
tablespoons of cold butter I’ve cut it
up into smaller cubes so now you’re just
going to continue to work that in with
your fingers until it resembles fine
crumbs
now once the butter is worked
in I uh beat a large
egg here in a cup I only used a cup
because it was
available
and actual canoli recipes call for
Marcel wine I don’t cook with wine so
I’m using half a cup of
grape juice white grape
juice then just mix that all
in so once you’ve got everything worked
in I um just kneaded it here in in the
bowl for a couple minutes till I had a
nice dough that everything seems to be
all
mixed so I’m going to divide it into
three separate
discs flatten it
down and I’m putting it in wax paper I
guess you could use uh plastic wrap I
have wax paper so that’s what I’m using
so I’m just going to wrap up the three
discs and then uh refrigerate them for 1
hour now I’ve rolled out the dough very
thin and I’m just using a wide mouth
container cut out a
round sprinkle a little bit of flour on
the round and then I have these metal
tubes they’re not canoli tubes but
they’re metal tubes that can go in the
oil so then I’m going to wrap the dough
around the
tube and using egg
wash it’s just a egg that I’ve mixed up
just
seal and then
press
into hot oil
for about 3
minutes this is just what it looks like
when it’s done done so now it’s just
going to cool and then I’m going to fill
it now here are my uh canoli
shells see this one how it’s opened up
that’s what happens if you don’t seal it
well enough with your egg
wash now in order to um fill your canoli
here’s a filled one I did uh a mixture
of a cup of racotta very smooth ricotta
with um 1/4 cup of icing
sugar so using a sandwich bag I just cut
the end
off just pipe ricotta into the
little
cone and if it didn’t go all the way
down you can also pipe in a little bit
from the other
side then if you want you can use
chocolate
chips to decorate it up a little bit
mini chips regular chips I have regular
chips so that’s what I’m doing now you
can make other fillings this I had
ricotta so that’s what I’m using but you
can do like a lemon
custard I might do a couple of Nutella
and if I do I will show you how to make
the filling
but that’s it for canoli easy
enough now I’m going to make um Nutella
filling for the canoli so the rotta that
I had mixed
with um icing
sugar about a teaspoon of
cocoa mix it

now you can use um food
processor
whisk this
little not that handy Gadget that I
have
whatever
but once you’ve mixed it
up before I put them into the
shells
nice you can uh mix it with um if you
have hazelnuts some toasted
hazelnuts or use it just like that fill
your shells same way as I did the other
ones that’s it
