Making Shrimp Risotto

let’s get the show on the road here
first we got some chopped onion Rec
constituted blend of mushrooms some
white wine some a bro rice it’s called a
bro rice I put it at the Italian deli
I’m not sure if I’m going to put cheese
in it cuz it’s there a creamy rice to
begin with and then I have some shrimp
stock that I made from the shrimp shells
we’re going to add chopped onions and
chopped mushrooms let’s let this cook
for a
while it’s a good broth I mean that you
know before you you got here I peeled
all the shrimp which I forgot to show
you this is a couple pounds of shrimp
from Argentina deep water wild CAU

shrimp you can tell they speak Spanish
when they’re alive they don’t speak
Portuguese in Argentina no you don’t
know that Brazil uh I did know that I
just like that you always Brazil how did
you learn this stuff I never thought you
you actually never went to school what’
you think I did I don’t know just
around with your friends all right we
want this onion to cook a a little bit
caramelize is is that would that be a
safe term to use here yeah except for
the fact that I don’t want to I don’t
want to change
colors so just sweating it all right
let’s put some wine in
it not ready yet well it could be ready
I think I’ll put the rice in first one
thing about the risotto I learned is it
really works when you’re the liquid is
boiling let’s put some wine in it which
isn’t boiling this is a 2 lb box of rice
okay so you’re using all that Rice why
not what am I going to do with this
usually uh all the rice I cook is like a
two to one one part rice two part liquid
this is a little more liquid to Rice it
is a it is a wetter dish so you end up
using pretty much all that broth oh
actually I need a little more oh so
you’re making some more right now I’m
not well I’ll add Just Add Water it’s
pretty strong in flavor
let’s come to a simmer hey
Bean all righty let’s put some shrimp in
it it’s a lot of
shrimp about how much that was about
might have been 2 lbs of shrimp well
once I peeled it it wasn’t 2 lbs all
right let’s cover the other up I’m going
to let it simmer now for 20 minutes how
did you make that broth well I peeled
the shrimp and I caramelized the shells
and I added a little tomato paste and
water and actually I had some clam and
shrimp base that I added to it that’s
like a bullion yeah and that’s how I
made it I’m going throw the rest of
these mushrooms in
there that looks pretty damn
good mushrooms shrimp and the rice of
course chopped onions pretty much in my
whole life chopped onions goes in
everything what are you doing there I’m
going to put some crushed red pepper in
it little
garlic
looks good though doesn’t it yeah looks
great and the rice is just becoming one
starting to swell I could have put the
shrimp in a lot later yeah well the
recipe close for it when I did but I it
doesn’t take long to cook a shrimp the
rice is still a little out
done when you taste the rice you want it
to be cooked it’s getting there but it’s
still chewy in the cover of it yep
huh no idea to you it’s all
about getting something to eat and
playing with your toy go get your toy
will you go Beat It Go beat it oh you’re
not such a bad dogy have okay this is
beanie the
dog he’s looking at tonight’s Cornish
hand saying it’s still raw when are you
going to cook it how are you going to
cook it he has no idea how up

there I don’t know if I need more liquid
we’ll have to taste that rice to see the
recipe actually called for more liquid
than I put in that’s why I kept adding
but the stock was so strong so just
adding water was okay starting to look
like

yeah I bought this rice months ago I had
the dehydrated mushrooms I got from
Costco and I always have case of
shrimp somewhere just in case 300 people
need risotto no yeah that’s the only the
only thing left is find someone to eat
all this I think there might be a few
volunteers I can volunteer I’m having a
hard time not putting parmesan cheese in
it it doesn’t even call for it all right
I’m GNA put a little in just a
little just a little bit you know you
can’t get carried
