My last meal was at a cafe where you have a big menu on a screen. Since it was pretty late at night and I had a flight on the next day I decided to eat some light soup to not upset my stomach. My choice was udon and gimbap. Unfortunately the udon soup was bland… it tasted only after seaweed but there was neither salt nor soy sauce added and I was quite disappointed having it for my last meal. My question is, was it just a single case of under seasoned broth or is it intended to be very light?

    Every time I had udon in Korea they were in a simple broth like that! Like only slightly salty/savoury. I think they have more elaborate broths for udon in Japan.

    Non spicy korean food is generally is less salty than Japanese food. Side dish like kimchi, danmuji make up for the blandness
